Among the most representative products of the Cilento culinary tradition is one that almost no one knows outside the area: Fico Bianco del Cilento DOP. It is a dried fig produced using a precise artisanal technique from the Dottato variety, which is native to the area and grown in a small part of the Cilento National Park. The DOP, Protected Designation of Origin, recognizes this uniqueness. Paolo De Simone, with the Modus supply chain, brings this product to Milan as an ingredient in everyday Cilento cuisine.

What are Fichi Bianchi del Cilento DOP?

Fico Bianco del Cilento DOP is a product made by processing and drying fresh figs of the native Cilento Dottato variety, grown in a defined geographical area of Cilento, in the province of Salerno. The DOP specification, approved by the European Community, precisely defines the permitted variety, production area, cultivation techniques, harvesting methods, and drying processes.

The result is a dried fig with a unique character: amber-yellow pulp, a soft texture, and an intense sweet flavor with notes of honey, almonds, and caramel. Sun drying, which can last for days depending on the weather, concentrates the natural sugars without the addition of preservatives or artificial sugars. The finished fig is dry, soft, and fragrant.

Why do Fichi del Cilento have the DOP label?

The DOP label protects the indissoluble link between the product, the area, and the production method. For Fichi Bianchi del Cilento, this link has been documented for centuries. Over the centuries, the Dottato variety has adapted to the area's specific microclimate: hot, dry summers, mild winters, and sea breezes that facilitate natural drying, as well as poor limestone soils that concentrate the aromas in the fruit. These conditions cannot be replicated elsewhere.

The DOP specification guarantees that every package of Fichi Bianchi del Cilento DOP contains only figs grown in that area, from that variety, and produced using those techniques. By definition, Fico Bianco del Cilento DOP is produced artisanally, on a small scale, and seasonally.

How are Fichi Bianchi del Cilento DOP produced?

Production follows a precise calendar dictated by nature. The figs are harvested by hand between August and October, when they are fully ripe and begin to detach spontaneously from the branch. Harvesting is done by hand because machines cannot operate on the steep terraces where Cilento figs grow.

After harvesting, the figs are cut in half with a knife, a process called spaccare, and placed on wooden racks or woven cane mats with the pulp exposed to the sun. The specification also allows for drying support systems and oven baking. Once dried, the figs are infilzati: assembled in pairs with the pulp touching, often with bay leaves, wild fennel seeds, or lemon peel inserted inside. The aromatic herbs flavor the fig from the inside during storage. The Cardone walnut and almond infilatelle are baked in the oven after being stuffed.

How can you recognize an authentic Fico Bianco del Cilento DOP?

An authentic Fico Bianco del Cilento DOP has precise characteristics. The skin is thin, ranging from light yellow to yellow (amber-yellow or brown if the fig has been baked), and slightly wrinkled. The pulp is amber-yellow and dense, with the internal seeds visible. The texture is soft. The aroma is intense, with notes of honey, caramel, and, if the fig has been prepared with bay leaves or fennel, aromatic herbs. The flavor is very sweet, balanced by a slight natural acidity.

How are Fichi Bianchi del Cilento used in cooking?

Cilento cuisine uses dried figs very differently from industrial uses. They are served at the end of the meal and are also a versatile and complex cooking ingredient.

In Cilento tradition, dried figs accompany cheeses: the sweetness of the fig balances the saltiness of caciocavallo podolico and the spiciness of aged cacioricotta. It is an ancient pairing, part of the traditional snack served to Cilento shepherds. At Modus, this combination appears on appetizer platters: dried fig, caciocavallo, Gioi soppressata, and a drizzle of Cilento extra virgin olive oil.

Dried figs are also used in traditional Cilento sweet preparations: fig and walnut croccantucci, fig bread—a mixture of dried figs, walnuts, chocolate, and spices pressed into round shapes—and traditional Christmas sweets. At the Modus gastronomies, these preparations are available during the winter season, made according to the original recipes.

Modus Fichi del Cilento

Modus selects Infilatella di Fichi Bianchi del Cilento DOP from Cardone in Prignano Cilento, one of the producers that still uses hand harvesting and artisanal processing. There are three varieties, each with a different combination: the classic, the one with walnuts and wild fennel, and the one with toasted almonds and lemon peel.

Modus Fichi Bianchi del Cilento DOP are available at the gastronomies on Corso Italia and Via Pirelli, both packaged and as an ingredient in platters. They will soon be available at your home too.

Frequently asked questions

Are Fichi Bianchi del Cilento DOP different from regular dried figs?
Yes, significantly. Industrial dried figs come from generic varieties, are dried using accelerated methods, and are often treated with preservatives or added sugars. Fichi Bianchi del Cilento DOP come from the native Cilento Dottato variety, which is sun-dried using traditional methods without preservatives or added sugars.

How should Fichi Bianchi del Cilento DOP be stored?
In a cool, dry place, away from heat sources and moisture. Refrigeration is not necessary: the traditional drying process naturally preserves them for several months. Once the package is opened, store them in an airtight container for 4 to 6 weeks.

Are Fichi del Cilento suitable for those following a no-added-sugar diet?
Fichi Bianchi del Cilento DOP contain no added sugars: their sweetness comes exclusively from the fruit's natural sugars, concentrated during drying. They are naturally rich in fructose. Those who manage their sugar intake for medical reasons should consider them in this context.

In which traditional Cilento recipes are dried figs used?
The most typical preparations include fig bread (made with dried figs, walnuts, chocolate, and spices), fig and walnut croccantucci, traditional Christmas sweets, and pairings with Cilento cheeses and cured meats. Modus offers these preparations at its gastronomies during the autumn and winter seasons.
